- Cut the firm Greek cheese into slices or wedges approximately ½ inch thick. Work with chilled cheese for cleaner cuts.
- Pat each cheese slice thoroughly with paper towels to remove surface moisture. This step ensures proper flour adhesion and prevents splattering during frying.
- Spread the flour on a flat plate and season with freshly ground black pepper. Press each cheese slice into the flour, coating both sides completely. Shake gently to remove excess flour.
- Pour olive oil into a non-stick skillet and heat over medium-high setting until the oil shimmers but does not smoke.
- Carefully place floured cheese slices into the hot oil without overcrowding the pan. Fry for 1 to 2 minutes on the first side until golden brown, then flip and cook the second side for an additional 1 to 2 minutes until equally crisp and golden.
- Transfer fried cheese to paper towels to drain excess oil. Serve immediately while hot and crispy with fresh lemon wedges on the side.
