01 - Place shredded coconut in blender. Pour hot water over coconut. Blend at maximum speed for 2-3 minutes until mixture becomes homogeneous and creamy.
02 - Line a large bowl with cheesecloth or clean kitchen towel. Pour blended mixture into cloth. Twist cloth tightly and squeeze firmly to extract all liquid, pressing coconut pulp thoroughly.
03 - Using funnel, transfer coconut milk to clean glass bottle. Refrigerate immediately. Shake vigorously before each use. Keeps fresh up to 4 days.
